Amazing what delicate food can be served, even with minimalistic kitchen supplies fit for boats like a Seascape 27. With only one pot, one pan, one hotplate, some cutlery and the proper ingredients, a tasteful pasta is an easy treat. Best think about it: the ingredients don’t require cooling.
So I thought I do something useful for a change and write down the recipe. Just in case it’s raining and barbecue is totally out of the question of course.
Equipment
- deep frying pan or pot (for the sauce)
- pot (for the noodles)
- cutting board and knife (to cut)
- one hot plate
Ingredients
- noodles – preferably a type where a lot of sauce sticks to
- (fresh) garlic
- (fresh) basil
- onions
- canned chopped tomatoes
- salt & pepper
- sugar
- Parmesan cheese
Instructions
The Sauce
- Cut the garlic into slices – not to small once.
- Do the same with the onions
- In your pan, braise both lightly in olive oil
- add chopped tomatoes
- add a little sugar
- salt and pepper to taste
- add chopped basil for taste and color
- cook for ~10 minutes without the lid
The noodles
- Put the pot / pan with the sauce aside. Cover it with a lit, if you have one
- Cook the noodles to your liking
- When done, put the sauce on plate again until its hot again (~ 2-3 minutes)
Serving
Add fresh basil leaves and Parmesan cheese on top of the noodles and sauce. Enjoy with a light and fruitful red wine or single malt scotch like me on the picture below.
